Red Lentil Soup (max. 20 min)


A super quick, delicious, healthy soup!




Ingredients:
1 cup dry lentil
1 small size onion
2 potatoes
1 carrot
2 teaspoon olive oil
1 lt boiled water

Optional: salt, blackpepper, crushed chillies, lemon

Instructions: 
1. Wash the lentils and sieve them with a strainer or simply use your hands
2. Peel the onion and chop
3. Heat the olive oil in a medium size pot over a medium heat
4. Put the onions and stir until they're soft
5. Meanwhile peel and chop the carrot and potatoes and put the kettle on
6. Add them all into the pot
7. Once the vegetables are soft, puree them with a blender until smooth
8. Add salt, blackpepper, chilles and serve with a slice of lemon.

Voila! Bon appetite!

Serving suggestion:  
- In Turkey, they put a few lemon drops in this soup as they really go well together.

- They also serve it with a simple butter sauce.
 You can melt 1 or 2 tablespoons of butter in a small saucepan on a medium heat for a minute or two, until it starts to foam and turn golden-brown, then stir in the red chillies and take off the heat. Then trickle the butter on the top of soup and serve. I love the sizzling sound it makes. :)

Recipe Notes:

If you like, you can add beef or chicken stock cubes during boiling the vegetables.
