LEEK AND POTATO SOUP! (BRITISH STYLE) Creamy without using cream.
THIS RECIPE IS THE EASIEST VERSION OF THIS SOUP I'VE TRIED SO FAR.
Soooo quick and simple yet YUMMY! (My husband even said "It tastes better than Baxters")

Ingredients:
2 leeks (don't use the leaves)
3-4 medium size potatoes
1 small onion
1 tbs butter
Crushed chillies (optional)
1 glass of milk
3-4 glasses of hot water
Directions:
1. Peel and chop the onions and leeks finely.
2. Put the butter in a soup pot and heat on a medium heat.
3. Add the leeks, and onions and saute until transparent. Add salt and chillies as well.
4. Meanwhile peel and chop the potatoes and add to the pot.
5. Add water slowly. Don't let it become thin. If it's thick enough for you don't add more water. Remember you'll add milk later as well.
6. Let them simmer until the potatoes are soft. (Don't let them get too soft otherwise they'll be mashed)
7. Take a few potatoes out of the mix and blend the rest with the mixture in the pot.
8. Add milk slowly and keep stirring.
9. Boil it once and add the potatoes you kept aside.
