Menemen (Turkish-Style Scrambled Eggs With Tomatoes, Onions, and Chilies)

Ingredients:
1 small onion
3 ripe tomatoes
4 green peppers
1 ts salt
1 ts black pepper
1 ts crushed chillies
3 ts butter
Instructions: 1. Peel and shop the onions finely
2. Chop or grate the tomatoes saving the juice
3. Dice the peppers
4. Melt the butter in a med size pan over medium heat
5. Sautee the onion until translucent
6. Once they're cooked, add diced tomatoes, peppers and spices and stir to combine
7. Put the lid on and reduce the heat so that it will simmer gently
8. Meanwhile, scramble the eggs, salt and spices in a seperate bowl
9. Add the mixture into the pan, give it a stir and put the lid on again.
10. You can serve once the eggs are cooked.
Recipe notes: You can sprinkle some feta cheese or any kind of melting cheese (preferably kashkaval) on it as seen in the photo.
